Description: *
Formosa Wu long (Organic) Tea. Wu long (black dragon) is the name for semi-fermented tea. After rolling, the tea is allowed to ferment only until the edges of the leafs start to turn brown. The tea is then fired which arrests the fermenting process and captures the interesting character associated with Wu long tea. In Taiwan, producing wu long tea involves highly specialized skills in the control of the withering, oxidation and firing. A slight variance in any of these gives each variety a distinctive aroma, flavor, color and finish.
The best Wu longs come from Taiwan (Formosa) where the character of short-fired wu longs has been described as peachlike with a refreshing fruity herbaceous character whereas long-fired wu longs take on bakey notes with rich amber liquids. This tea falls into the latter category.
It is worth noting that in Taiwan, the making of wu long tea is regarded as a precious art that requires years of training. From the nursing of a seedling, to planting, to nourishing the bushes, to properly selecting the best time to pluck the leaves, the husbandry of the tea farmer is a legacy passed down from many generations. It is felt that only the application of years of dedicated study and practice, combined with the unique character of Taiwan tea leaves, can provide the exceptional quality oolong teas that have made the island famous for its teas.
Compared to the Formosa Oolong (Fancy) it has a longer leaf and a smoother cup.
Use 1 heaping teaspoon per 6 oz cup. Heat water until steaming. Steep for 3 minutes.

"I look forward to my next cup. Great flavor and a nice aroma. I use a french press coffee pot to make the tea in. Works like a charm. Can get a little bitter if steeped to long. the 3 minutes works nicely."

"This was a very strong tea for me, but not bitter. It was good hot, and even better cold. I think I could get many cups from one teaspoon. "

"Delicious! It has inspired several of my students to start brewing loose-leaf tea. Even people who aren't tea-drinkers raise their eyebrows and say "wow - that IS good!""
