Ti Kuan Yin (Iron Goddess) Tea. Ti Kuan Yin is the most famous of the Chinese Oolongs. This tea produces a light, sweet cup with a fragrant orchid finish.

Legend:
The legend behind this tea has many variations but the following is the most common account.

Deep in the heart of Fujian's Anxi County there was a rundown temple that held inside an iron statue of Kuan Yin, the Goddess of Mercy. Everyday, on his walk to his tea fields, a poor farmer would pass by and reflect on the worsening condition of the temple.

Something has to be done, thought Mr. Wei. But he did not have the means to repair the temple, poor as he was.

Instead the farmer brought a broom and some incense from his home. He swept the temple clean and lit the incense as an offering to Kuan Yin. It's the least I can do, he thought to himself.

Twice a month for many months, he repeated the same task. Cleaning and lighting incense. One night, Kuan Yin appeared to him in a dream. She told him of a cave behind the temple where a treasure awaited him. He was to take the treasure for himself, but also to share it with others.

In the cave, the farmer found a single tea shoot. He planted it in his field and nurtured it into a large bush, of which the finest tea was produced. He gave cuttings of this rare plant to all his neighbors and began selling the tea under the name Ti Kuan Yin, Iron Goddess of Mercy.

Over time, Mr. Wei and all his neighbors prospered. The rundown temple of Kuan Yin was repaired and became a beacon for the region. And Mr. Wei took joy in his daily trip to his tea fields, never failing to stop in appreciation of the beautiful temple.

Basic brewing method:
Use 1 level teaspoon per 6 oz cup. Heat water until steaming. Steep for 2 minutes. Good for 9-10 infusions with cups 2 and 3 often considered the best. Best prepared gongfu style.

Also available in our convenient 1 oz Iced Tea Pouches to make 2 quarts of tea (4 pouches per package to make 2 gallons or 8 quarts of tea). Select the 'Iced Tea (4)' option. To brew iced tea, add 1 iced tea pouch to 1 quart of boiling water. Steep for the time listed. Pour tea over a 2 quart pitcher full of ice. Add sugar to taste.

"Still a lighter oolong, I found this tea to have a deeper, almost toasted flavor when compared to Ti Kuan Yin (Phoenix #1). The floral qualities are present, though not as pronounced as in the Phoenix #1 variety. The tea lasts well through multiple steepings. This tea is a great value for the price."

"I didn't expect to like this, thinking it would be too close to "green", But it is delicious! I don't know "orchid" but it does taste flowery. I took one measure to work with me today, and been sipping it all day. Beautiful green/gold color and taste through 6 steeps. Continued on to 7th and 8th just to see if it would go that many. Their flavor was not as strong, but still good. Will definitely order more."

"Sweet, smooth, and flowery. This tea tastes like it should cost twice what it does. I prefer to let is steep longer than recommended (normally 4 mins) and it is good for at least two steepings. Make sure you give the leaves plenty of room to open or you'll get a flat tasting cup."
